Displayed in the lobby of The Ritz-Carlton, hundreds of opera and ballet enthusiasts came to see this achievement and to photograph it so they would remember this artist’s salute to the Bolshoi for years to come. Which is exactly why this pastry chef followed his childhood passion—to use his talents and artistry to find new and unexpected ways to please guests and create memories that will last far beyond their stay.</p>

He has made it not just a garden, but a setting for parents and children to connect, bond and share time that will be remembered and reflected upon for many years to come.     <P>MAKING THE SWEETEST MEMORIES</P> <P>At the Ritz-Carlton, Tokyo, the sous chef creates unforgettable, award-winning desserts that typify the craftsmanship on display in all The Ritz-Carlton hotels. The chef was part of the Japanese national team whose seven-foot-tall chocolate piedmont finished second in 2011’s la Coupe du Monde de la Patisserie contest. “I love to match desserts with main courses,” he says. “It’s a creative challenge because the dessert needs to be visually appealing as well as being a fresh and complementary taste to the main course.” His signature dish, yuzu soufflé, marries the devilishly difficult French delicacy with a delicious Japanese seasonal fruit. Recently, he recreated the Tokyo Midtown Tower--in chocolate. His greatest thrill, however, is seeing the delighted faces of the guests as they encounter his creations. </P>
