August 25, 2011
Yield: 10 Individual Servings
Considered by some to be the epitome of indulgence, this sinfully rich dessert combines the best of a flourless chocolate cake and a soufflé.
- 2 3/4 sticks Unsalted Butter, melted
- 11 oz. Chocolate, 70%
- 7/8 cup Granulated Sugar
- 7/8 cup All Purpose Flour
- 7 each Large Eggs, whole
- 8 each Egg Yolks
Molten Chocolate Cake Method:
Combine melted butter and chocolate in stainless steel pan. Warm over low heat, stirring constantly, until chocolate is fully blended. Add eggs, egg yolks, sugar and flour; mix until combined but do not over mix. Use (10) 4 oz. aluminum cups or ramekins that have been greased and floured and fill with the mix. Bake at 330°F for approximately 12 minutes. Let cool a few minutes and unmold; serve immediately.
Serve warm with vanilla ice cream and vanilla sauce or raspberry sauce.
