Fleur De Sel is collected from the very top layer of the famous French salt ponds and is known as the “caviar” of salts. It is best used as a finishing salt as it breaks down other herbs and highlights individual flavors in foods. Small $20Sel Gris is stone ground and no additives of any kind are mixed with the salt. It has a lower sodium content and is a perfect replacement for table salt. Small $15 Alaea is traditional Hawaiian table salt rich in trace minerals also found in sea water. This salt is enriched with the iron oxide of harvested red ‘Alaea clay. Alaea is wonderful for roasting or grilling meats. The red clay seals in the moisture and adds flavor.
