Sous Chef Simon Fernandes has more than 15 years experience in hospitality. After completing his Diploma in Hotel Management in Mumbai; he first started in Food and Beverage as a trainee at Taj Residency in Nashik, India. As he is always keen exploring new fields and looking to extend his expertise he decided in 2002 to change from Food and Beverage to the culinary department following his true passion for cooking. Over the years, Chef Simon has derived various techniques and styles inspired by his culinary mentors. His style of cooking incorporates various cuisines from French, British, Far East and Asian to Middle Eastern. Chef Simon loves flavors and simplicity which blend in well to create unique dishes yet not being to complicating on the palette but interesting in taste.
