Chef Arnaud Berthelier is a native of the Lorraine region in northeastern France, bordered by Alsace and Champagne and confesses, “I learned to cook so I could travel.”
Chef Berthelier did travel extensively worldwide and now integrates the flavors and nuances of the cuisines he experienced, resulting in unique menus with complexity and refinement.
French, Spanish and Northern African influences are evident Chef Berthelier’s dishes which incorporate the regional cuisines of the countries that ring the Mediterranean, an inland sea of almost one million square miles bordered on the north by Europe, on the east by Asia and on the south by Africa.
Chef Berthelier is a veteran of the culinary trade, with tours throughout the Mediterranean, including the position of Executive Chef at The Ritz-Carlton, Sharm El Sheikh in Egypt.
Prior to joining The Ritz-Carlton, Chef Berthelier held various positions in multi-star Michelin restaurants throughout Europe, including Alain Ducasse’s Le Louis XV, Monte Carlo; Le Saveurs, London; and La Tour d’ Argent and Michel Guerard, Paris among others. He also worked with Gray Kunz at Lespinasse in Washington, D.C. and has spent time in Japan. At the conclusion of a three-month worldwide search, Arnaud Berthelier was appointed as chef of The Dining Room in 2005.
Chef Berthelier is nominated for the prestigious 2007 James Beard Foundation Award for "Best Chef: Southeast."
