The majority of the world’s rum production occurs in and around the Carribean and in several Central American and South American countries, such as the Domincan Republic, Guatemala, Colombia, Venezuela, Barbados, Jamaica, Trinidad and Tobago, Puerto Rico, Brazil, Haiti, Belize, Guyana and Cuba. There are also rum producers in places such as Australia, Fiji, Mexico, the Philippines, India, Reunion Island, Mauritius and elsewhere around the world.
Rum plays a part in the culture of most islands of the West Indies, and has famous associations with the Royal Navy (where it was mixed with water or beer to make grog) and Piracy (where it was consumed as Bumboo). Rum has also served as a popular medium of exchange that helped to provide economic instigation for Australia’s Rum Rebellion and the American Revolution.

Whiskey is a type of distilled alcoholic beverage made from fermented grain mash. Different grains are used for different varieties including barley, malted barley, rye, malted rye, wheat and corn. Whiskey is aged in wooden casks, made generally of white oak, except that in the United States, corn whiskey need not be aged.

Scotch
Whiskey has been produced in Scotland for hundreds of years. The Gaelic “usquebaugh,” meaning “Water of Life,” phonetically became “usky” and then “whisky” in English. According to the Scotch Whisky Association, no one knows exactly when the art of distilling was first practiced in Scotland; it is known that the Ancient Celts practiced distilling, and that the liquid they produced -- known in ancient Gaelic as Uisge Beatha (“water of life”) -- evolved into Scotch Whisky. By the 11th century, distillation first occurred in Scotland in the early Christian monastic sites. The first taxes on whisky production were imposed in 1644, causing a rise in illicit whisky distilling in the country. Around 1780, there were about 8 legal distilleries and 400 illegal ones. In 1823, Parliament eased the restrictions on all licensed distilleries with the “Excise Act,” but making it harder for the illegal stills to operate, thereby ushering in the modern era of Scotch production.

Gin
There are several distinct styles of gin, with the most common style today being London dry gin, a type of distilled gin. In addition to the predominant juniper content, London dry gin is usually distilled n the presence of accenting citrus botanicals such as lemon and bitter orange peel, as well as a subtle combination of other spices including anise, angelica root and seed, orris root, licorice root, cinnamon, cubeb, savory, lime peel and grapefruit peel, dragon eye, saffron, baobab, frankincense, coriander, nutmeg and cassia bark. London dry gin may not contain added sugar or colorants, water being the only permitted additive.

Tequila
Tequila was first produced in the 16th century near the location of the city of Tequila, which was not officially established until 1656. The Aztec people had previously made a fermented beverage from the agave plant, which they called octli (later, and more popularly called pulque), long before the Spanish arrived in 1521. When the Spanish conquistadors ran out of their own brandy, they began to distill agave to produce North America’s first indigenous distilled spirit.

Cognac/Armagnac
Cognac, named after the town of Cognac in France, is a famous variety of brandy. It is produced in the wine-growing region surrounding the town from which it takes its name, in the French Departments of Charente and Charente-Maritime.
Armagnac is a distinctive kind of brandy, or eau de vie, produced in the Armagnac region in Gascony, southwest France. Armagnac was one of the first areas in France to begin distilling sprits, but the brandies produced have a lower profile than those from Cognac, and the overall volume of production is far smaller.

Cordials
Most cordials were of European origin, first produced in local Italian apothecaries during the Renaissance, where the art of distilling was refined during the 15th and 16th centuries. It is from this origin that cordials are frequently referred to in French as Liqueurs d’ Italie; it is also from this that we have “liqueurs.” From the Renaissance onward, cordials were usually alcohols in which certain herbs, spices or other ingredients were allowed to steep. The first cordials arrived in England in the late 15th century and were called distilled cordial waters. These were strictly used as alcoholic medicines, prescribed in small doses to invigorate and revitalize the heart, body and spirit as well as cure diseases. By the beginning of the 18th century, cordials were imbibed for their intoxicating effects and medicinal virtues, fast becoming recreational drinks, eventually evolving into liqueurs.
