Join one of Rummier at high noon for a tasting in the relaxing ambience of the Cohoba Lounge. Come and be introduced to one of the largest collections of rums in the world. The Rummier will educate and surprise you with aspects you would never have thought of, from sugar cane to the bottle. Taste the infamous Appleton 21 (known to be the cognac of rums) which so many characterize as having a smooth and unique balance for almost any drinkers palate. White Rums White Rums, with their delicate taste, make the ideal base for many mixed drinks and cocktails. Though they do not have the same depth of flavor as their darker cousins, their subtlety and versatility is ample compensation. Golden Rums Golden Rums are of great importance to the blender as they can be used to create smooth blends with more depth than is possible using white rums. Varying from light to medium and heavy bodied, these rums acquire their warm glow in the cask. Dark or Navy Rums Dark Rums represent the earliest form of rum. Commonly called Navy Rum, a name derived from the 16th century when a ration was given to British Naval Office everyday while at sea. The rich, robust and pungent flavor is not intended to be consumed on its own. Aged Rums Aged Rums are usually dark golden because they have spent so long in the cask that they have drawn their color from the wood and literally become tanned. With this process all traces of roughness vanish, leaving a spirit that can surpass cognac in smoothness and bouquet. Over Proof Rums These spirits are most frequently white rums bottled at extremely high alcohol content. Over proof spirits are those bottled at more than 50 percent alcohol by volume. These types of rums contribute a distinctive “charge” to any cocktail. Flavored & Spice Rums As the names imply, the addition of natural fruit flavorings or a small bevy of spices alters these rums. White rums are most often married with fruit flavoring, while gold or aged rums are more often used as the base for spiced rums.
Kill Devil: Ancestor of Rum When cane juice is boiled under vacuum, sugar crystals are formed and separated from the residual molasses. Widely used as food for the poor and cattle feed by the rich, it was only a matter of time before the intoxicating properties of molasses were discovered. This sucrose-rich brown syrup mixed with water eventually ferments and becomes diluted alcohol. When distilled, this 'crude liquor' appeared to engender such loutishness by whoever drank it that it became known as 'Kill Devil'. How Rum Got Its NameThe raw fiery alcohol, Kill Devil, was said to 'light a blaze' and provoke unruly rumbustious behavior. Although riot and mayhem are no longer part of the rum experience, the spirit's vibrant origins seem enshrined within the very name 'rum'. Experts fail to agree on the origin of the word. However, various romantics propose that the name 'rum' is derived from the rumbullion, rumpus and rumbustion that were essential parts of the drinking experience.
