Francesco Greco has been appointed as the new chef de cuisine of Palladio Italian restaurant.  A native of Milan, Italy, Chef Greco brings with him more than a decade of culinary expertise to showcase the finest Italian cuisine in Shanghai.

Chef Greco’s foray into Asia began at the Grand Copthorne Waterfront Hotel in Singapore, where he was previously chef de cuisine in Pontini Italian restaurant. During his stint there, he participated in the World Gourmet Summit in 2006. Over the years, Chef Greco’s culinary skills were honed by having worked in top restaurants in New York and London and Restaurant Taillevent in Paris, France, a 3-Michelin star establishment with Head Chef Alain Soliveres. He also collaborated with the 1-Michelin star Villa Fiordaliso, the Hilton and Marriott hotels in Milan. Other talented chefs who were instrumental in his career included Head Chef Paolo Budel of Galleria restaurant and Executive Chef Romano Resen from the five-star Principe di Savoia in Milan. Armed with a Kitchen Services Diploma in A. Vespucci in Milan, Chef Greco began his career in Stage at Savini restaurant in Milan.

With fond memories of his mother baking a range of breads and pasta al forno (oven-baked pasta) during his childhood, Chef Greco will delight Italian food connoisseurs with signature dishes such as braised octopus “Alla Luciana,” soft polenta and sweet garlic Velloute, Boston lobster “Tegame,” sautéed purple artichokes and reduction of a spicy bisque and Vialone Nano Parmesan risotto, glazed goose liver, sage soufflé and veal Jus.
