Gianluca Serafin has been appointed as the new chef de cuisine of Palladio Italian restaurant, announced The Portman Ritz-Carlton, Shanghai General Manager Manfred Weber. A native of Torino, Italy, Chef Serafin brings with him more than a decade of culinary expertise to showcase the finest Italian cuisine in Shanghai.
Serafin has worked in leading establishments throughout Europe and recently returned from two years in Japan, where he assisted with the opening of Enrico Derflingher’s restaurant. Prior to arrival Shanghai, Serafin was a Chef de cuisine and Italian Chef at Mezzaluna fine dining restaurant at The Mandarin Oriental Macau.
Chef Serafin describes his passion for creating traditional Italian dishes with an inventive twist, and of course, using only the freshest of ingredients. “When I was a young boy growing up in Northern Italy, my father had a garden, and I would always go with him to pick the vegetables for his cooking, and that’s how I learned the flavour of truly fresh ingredients,” said Serafin. He insists his style is not fusion, but rather a modern creativity that stays deeply respectful to Italian culinary traditions.
With fond memories of his father baking a range of breads and pasta during his childhood, Chef Serafin will delight Italian food connoisseurs with signature dishes such as cold borlotti bean soup with a rosemary scent, crispy asparagus floats amid the rich gorgonzola cheese cream, spinach and ricotta cheese cannelloni, pineapple Tatine and Kataifi.
