At Arita, great sushi is the sum of its parts. Only the best rice – Koshihikari – will do. Other essential products such as Tsushima seaweed salt from Nagasaki Prefecture enhance the offering of sushi and allow sushi chef the ability to create an exceptional dining experience that showcases his “edomae style” of sushi, which is essentially a combination of fresh raw fish and cooked rice that is seasoned with rice vinegar.
Using the yearly fishing seasons, chef creates sushi that highlights the bounty such as tuna from December to February and sea urchin from Awaji Island from July to September, as well as unique offerings such as seared tuna sushi and marinated kelp – items only available at Arita.
