Local Culinary Delights
In Caribbean black cake, currants, raisins and prunes are soaked in a mixture of rum and wine for months before being used in the cake. Once it is baked, it is ‘watered’ daily with rum to intensify the flavor and maintain moistness. All family recipes for black cake are unique, but one thing remains the same: it takes time to make, so it is given to friends and family as a gesture of love and gratitude. The Ritz-Carlton, St. Thomas is offering Caribbean black cake to guests as a sign of appreciation and best wishes for the year ahead, in true Caribbean hospitality. Taste this local tradition alongside the resort’s homemade eggnog, made with local rum infused with cinnamon and lemon peel.
