Chef in Essenza crafts pink-ribbon-inspired four-course Italian tasting menu

ST. THOMAS, U.S.V.I.OCTOBER 7, 2016 –To honor National Breast Cancer Awareness Month this October, Chef de Cuisine Norman McPherson has crafted a four-course chef’s tasting menu with elements inspired by the signature pink color that promotes breast cancer awareness worldwide.

Essenza, the Italian restaurant at The Ritz-Carlton, St. Thomas, boasts rustic cuisine that is crafted and served to feel like home. The tasting menu features one item in each course that gives the plate a pink color, with prosciutto-covered melon as the antipasto course, followed by red snapper in brodo, a roasted beet risotto accompanying a slow-braised short rib, and a strawberry panna cotta to round out the dinner. The meal will also begin with a glass of Louis Perdrier Brut Rosé as an aperitif, preparing guests for the culinary experience to follow.

The menu is available daily throughout the month of October. Five dollars and fifty cents from the sale of each menu will go to The American Cancer Society on St. Thomas, supporting research, patient services, early detection, treatment and education. The resort will then match the final amount before donating.

“This is a cause that is near and dear to my heart,” said Chef Norman. “I was thrilled at the opportunity to create a menu that will take guests on a culinary journey, but also honor those who are fighting or those we have lost to this disease.”

In addition to the menu, on Friday October 14, the resort’s entire team of Ladies and Gentlemen will also wear pink in support of co-workers, friends and family who have been affected by breast cancer.
