CHARLOTTE, NC – August 25, 3016 – The Ritz-Carlton, Charlotte is taking wedding cakes to new heights this season, as pastry artist Crystal Broadbent has unveiled a collection of wedding cakes and desserts designed to dazzle even the most forward-thinking of couples. The creative new offering is on edible display at the hotel’s Design Studio, which dominates nearly a full floor of the hotel.

Crystal Broadbent has two inspirations: “Rustic Luxury” and “Fancy Fondant” – with each representing highly visual wedding cake categories trending among late 2016 and 2017 couples. For Broadbent, “Fancy Fondant” refers to wedding cakes which are bigger, more elaborate, and leaning toward the artistic or sculptural use of fondant icing.  Fancy Fondant couples often conceptualize intricate visual detailing for their cakes, and to serve this preference, Broadbent has recently created imaginative handiwork featuring pleats, ruffles, and even feathered styling. She also has fashioned inventive, multi-layered cakes with metallic accents, sugar showpiece adornments, illustrations, jewels and, most recently, fancy lace piping designed to match a wedding gown.

On the simpler side of the spectrum, Broadbent notes that today’s rustic wedding cakes tend to be smaller in size or in number of tiers. They also can be sumptuous naked cakes, which reveal their delicious and varied interiors, or even contemporary buttercream ruffle designs that can wow with their elegant simplicity (see how-to video).

For Broadbent, wedding cake flavor is as important as design, so she provides an equally passionate focus on presenting accessible tastes to please all members of the wedding party. Meshing traditional with contemporary, she incorporates some of her great-grandmother’s recipes into her own formulations, ensuring that a home-made southern touch is an option for any cake. Additionally, she harvests honey from two active beehives located on the green, vegetated roof of The Ritz-Carlton, Charlotte. Using this fresh natural honey and just-plucked herbs and fruits from the same rooftop garden, Broadbent adds natural honey to her buttercreams, or she can incorporate fresh mint into brightly flavored chocolate (see video) or signature hand-made gelato to be served alongside her cakes.

Crystal Broadbent was named pastry chef for The Ritz-Carlton, Charlotte in April 2016 and has spent her first months at the hotel designing its prestigious new selection of wedding cakes.
