CHARLOTTE, NC – March 17, 2016 – Spring and summer schedules have been announced for The Ritz-Carlton, Charlotte’s Cocoa Lab cooking school, with four group classes to be offered between May and August 2016. The fun and lively sessions are open to hotel guests as well as area residents, and none require culinary expertise.

The May 2016 class coincides with Mother’s Day weekend, providing an opportunity to treat Mom to a memorable culinary Saturday, while the June 19 session takes place on Father’s Day, presenting an inviting new Sunday experience for kitchen-friendly dads.

During each Cocoa Lab class, students work alongside one of the award-winning chefs of The Ritz-Carlton, Charlotte to learn cooking techniques and prepare menu items featuring chocolate, cocoa, dessert flavors, and fresh produce and herbs from the hotel’s rooftop gardens. As a favorite part of the experience, students can savor their own creations at the end of each session. They also receive complimentary hotel parking, a recipe collection, and a keepsake apron as part of the $100 USD class fee. Each Cocoa Lab class begins with a delicious hospitality experience to be enjoyed in the hotel Lobby Lounge.

Saturday, May 14, 2016 (Mother’s Day Weekend)
8:30 a.m. to noon
Truffles and Bonbons

Chocolate, cream and more chocolate -- what could be more delicious?  Participants can indulge in creamy rich chocolate-filled truffles which they themselves will prepare. Truffle and bonbon flavors include:

  • Dark Chocolate Cherry Cordials 
  • Classic Chocolate Truffles
  • White Chocolate Raspberry Bonbons 
  • Milk Chocolate Bonbons

Sunday, June 19, 2016 (Father’s Day)
8:30 a.m. to noon
Beer, Bourbon and Bacon

Inspired by some of a father’s favorite tastes, Cocoa Lab introduces the following desserts made with beer, bourbon and bacon.

  • Bourbon Pecan Pie
  • Bacon Spice Popcorn
  • Chocolate Stout Cake
  • Bacon Bourbon Brownies

Saturday, July 2, 2016 (Independence Day Weekend)
8:30 a.m. to noon
Pie for the Fourth of July

Aspiring chefs can get a head start on July 4 preparations by making the best classic American pies for their holiday barbecue.  Participants will learn how to produce a flaky tender crust, tasty fillings and traditional pie tops, with flavors as follows:

  • Mile-High Apple Pie
  • Lemon Meringue Pie
  • Bourbon Pecan Peach Pie

Saturday, August 20, 2016
8:30 a.m. to noon
French Pâtisserie

This special workshop is all about favorite French pastries that will be so good, students will feel like they’ve stepped into a Paris pâtisserie. Selections include:

  • Strawberry Eclairs
  • Caramel Religieuse  
  • Traditional Millefeuille (Napoléon)
  • Raspberry Macarons
