BEIJING, CHINA – October 2017 Here comes a great news for the gourmet aficionados of Beijing. During upcoming Nov. 21 to Nov. 24, the award-winning fine dining Italian restaurant Cépe of The Ritz-Carlton Beijing, Financial Street, will invite talented Michelin Chef Luciano Monosilio being guest chef for 4 days and debut his new creations with passion and appreciation to the respected guests of Beijing.
Cépe is one of Beijing’s finest dining rooms featuring haute Italian style cuisine. Wine aficionados will delight in an extensive wine menu featuring 200 wines. This 70‐seat dining room also features a private dining room for 10 (Porcino) and an intimate chef’s table (Bottega). It’s always a rewarding choice for business success celebration and leisure gathering with its supremely elegant setting and romantic ambiance.
Luciano Monosilio from Italy is best known as King of Carbonara. He developed an interest in cooking from a young age; after his diploma at Pellegrino Artusi Catering College, he gained valuable experience working at Roscioli Restaurant. He refined and increased his talent in the kitchen of some of the most renowned Italian chefs: Fulvio Pierangelini (Gambero Rosso**), Mauro Uliassi (Uliassi**) and Enrico Crippa (Piazza Duomo***, 15°of The World’s 50 Best Restaurants). At age 22 a two-year experience abroad, at Capetown (South Africa), to improve kitchen-manager skills.
Monosilio’s cooking philosophy lays the foundations on a deep knowledge of raw material and strong technical skills. He gained international fame thanks to pasta-based dishes, cornerstone of Italian tradition, such as his Carbonara, now widely recognized worldwide. Monosilio merges both tradition and innovation: each proposal of his menu is an evolution made of new elements, a fusion between unconventional and unusual combinations of chef’s experiences around the world and hints of ancient origins ingredients, dating back to the heritage of Roman times.
As this is the 2nd time of Chef Monosillio co-working with Cépe, his highly spoken culinary presentations last time in June 2016 have been drawing wide expectation ever since that time. Chef Monosillio customized 3 menus for Cépe this time, Lunch Radici menu will bring guests back to the roots of Italian cuisine, while Dinner Rami menu, hints the trend and future of it, like a time journey guide of Italian gastronomy history. Black Truffle lunch and dinner menu focuses on various amazing presentations of prestigious ingredient black truffle, also echoing the name of Cépe, Each menu incorporates his renowned signature dishes with his newly inspired creations. You could taste the “Poached Egg, Smoked Lapsang Souchong Thea, Black Truffle”, “Brittany Blue Lobster, Fermented Beetrots, Blood Orange” and his most famous “LA CARBONARA”, rewarding yourself with the strong and personalized style from this shining culinary star. During the dinner of Nov. 24, Chef Monosillio will provide an ultimate menu with selection from the 3 menus in addition to the outstanding wine paring form hotel’s Beverage Manager and Chief Sommelier David.
