As a native Hong Konger Chef Ku is passionate about Yum Cha (a type of Chinese stylebrunch tea, which involves drinking Chinese tea and eating dim sum) and has crafted a special Yum Cha menu at Yu, for Yum Cha devotees, there’s no greater pleasure than perusing an endless Hong Kong delights for weekend brunch.
Chef Ku lives by this philosophy of “patience is a virtue, foundation is essential, passion is life” with this dedication to his philosophy Chef Ku has embraced and learnt his art through a successful career that spans Hong Kong, Japan and now China. Passionate about authentic Cantonese cuisine, he has dedicated his career to expanding and sharpening his culinary skills. Starting off in Hong Kong’s famous Lei Garden restaurant to Xiang Tao at The Ritz-Carlton, Osaka (through his leadership Xiang Tao was awarded 1 Michelin star in 2009) then finally taking over the reins of “Yu” at The Ritz-Carlton, Beijing, he drives his philosophy by creating innovative yet authentic Cantonese cuisine. He achieves this by using local, seasonal and fresh ingredients as a foundation of his art. Highly inspired by delicate and detailed style of Japanese culinary culture, he infuses a beautiful touch of Japanese elements, within his presentation of Cantonese culinary art ,that brings the dining experience at Yu to new heights.
Delectable Chinese cuisine at Yu comes with fineness and sophistication of jade for its name sake, as seven luxurious private chambers and a tea master await all comers to intimate and sumptuous gastronomic affairs.
