Macau, September 29, 2016 – In the finest display of craftsmanship and exemplary culinary standards, Lai Heen, Macau’s highest Chinese restaurant, situated at The Ritz-Carlton, Macau, is presenting a limited-time fusion menu comprising seasonal favorites – hairy crabs from the Taihu Lake. With delectable dishes starting from MOP88* onwards, this exquisite selection is available throughout October and November. These hairy crab gourmet treats will be paired with premium ingredients such as the time-honored Superior Bird’s Nest guaranteed to tantalize the tastebuds; the extremely smooth and tender Wagyu Beef.
Guests can commence their extraordinary culinary journey with the appetizing Pan-fried King Prawn with Shrimp Mousse and Barley Topped with Crabmeat and Crab Roe Sauce. Put together with only the finest, succulent king prawns imported from Thailand, the prawns are expertly halved and pan-fried to a brilliant shade of gold. Next, the crab roe and crabmeat are mixed with superior broth to create a thickened broth before being combined with the prawns. To further distinguish the textures, barley is added to create alternating layers of chewy and crispy goodness, lending a punch to every single bite.
To refresh the palate, guests who order the Brittany Blue Lobster with Zucchini Topped with Crabmeat and Crab Roe Sauce are truly in for a treat. Zucchini from Italy is used to compose this dish filled with rich flavors and aromas. First, the vegetables are sliced and the centers are hollowed out. The delicate blue shrimp meat is then stir-fried and gently filled inside each zucchini slice. The gravy of crab roe, combined with tender crabmeat, is then carefully poured over the dish to finish with a flourish before serving to guests.
For a modern interpretation on the classic traditional Cantonese crispy noodles, the Pan-fried Mashed Potatowith Seafood, Crabmeat and Crab Roe. presents “noodles” that are actually made of fried potato strips, intertwined with one another to form a crispy textured base. Similarly, the thickened, flavorful gravy of the crab roe and crabmeat is added to top off the dish.
