If the Olympic Games are the ultimate dream of every athlete, for the pastry chef, the "World Pastry Cup" represents the pinnacle of pastry performance

Shanghai, China – May 22, 2017 – The first China Pastry Cup was the qualification round of the Asian Pastry Cup. The theme of the competition was “FUSION: The Beauty of Harmony.” Each team created their 4 presentation pieces within 8 hours. These included 15 plated desserts, 3 chocolate cakes, 1 chocolate showpiece and 1 sugar showpiece. Ryan, Pastry Sous Chef, and Prince, Pastry Demi Chef de Partie, won 2nd prize as well as the “Best Taste Award” prize under the leadership of Executive Pastry Chef, Jean-Luc Vasseur.

Ryan, who majored in food science, fell in love with baking while studying the food production process. This passion has kept him going for 12 years. Prince, who has been in the industry for 5 years, is a baking beauty who transferred from being a game specialist to a pastry specialist. Their professional management of their ingredients and exquisite craftsmanship were essential to winning the “Best Taste Award.” It is the first time they have attended this kind of competition. Lasting for 8 hours, it not only demanded the precise arrangement of each detail, but also concentration and attention to both appearance and taste.

The creations of The Ritz-Carlton Shanghai, Pudong used Beijing Opera and its instruments as inspiration in response to the theme “FUSION: The Beauty of Harmony.” Using culinary artistry, imagination and an appreciation of visual impact, Ryan and Prince captured both harmony and beauty in a fusion of shape and taste. They captured the essence of all masterpieces in every piece from their imitation ancient coins to the chocolate erhu showpiece.
