Finding the best caviar in China

Shanghai, China – November 1, 2016 – The Ritz-Carlton Shanghai, Pudong is always dedicated to finding the best ingredients for our guests. This time, our Executive Chef, Sandro Gamba took a trip to Thousand-Island Lake to discover its world-renowned high-class caviar. Accompanying him was the famous travel and lifestyle blogger known to her many followers as, ‘Ms. Paris’. It was an amazing culinary journey and they were greatly impressed by the spectacular location and quality of the delicacies on offer.

From the Ritz-Carlton Shanghai, Pudong, there was a 3-hour drive to Thousand-Island Lake in Hangzhou, Zhejiang Province. After another half-hour by speed boat, Sandro and Paris reached the center of the lake. These 70-meter deep waters are the sturgeon breeding base of caviar connoisseurs, Kaluga Queen, and the undisturbed location is a peaceful cradle for the mellow, translucent caviar.

To ensure himself the very freshest of ingredients, Chef Sandro leaped into the lake and bagged himself a 150-centimeter long, 30-kilogramme Russian Golden Sturgeon. He processed the caviar at the waterside and cooked two delicious dishes with the sturgeon steak and caviar for Ms. Paris to enjoy by the lake.

Caviar is known as black gold. It is among the world’s top three luxury delicacies together with foie gras and truffles, and it is also a panacea for health and beauty. Such fresh, healthy produce is hard to find, but in Shanghai you can enjoy caviar from Thousand-Island Lake in all the restaurants at The Ritz-Carlton Shanghai, Pudong.
