Shanghai, China – May 11, 2016 – Designed to inspire two different experiences from day to night, the new Portman’s at The Portman Ritz-Carlton, Shanghai is the focal point of dining and culinary excellence. Portman’s offers an all-day dining restaurant featuring uniquely designed table tops that reflect the Portman’s logo. For those with a discerning palate, guests will enjoy imported hand-selected cuts of Robbins Island and Cape Grim Australian Wagyu & Black Angus Beef, as well as premium seafood, all prepared by our first-class culinary team led by Chef Bradley Hull. As Executive Sous Chef at The Portman Ritz-Carlton, Shanghai, Chef Bradley has a tenure that includes more than 15 years of professional kitchen experience, with the last 10 years spent as Chef de Cuisine at top tier restaurants, hotels and resorts around the world. Through his culinary passion, Bradley has been busy planning his new menus, which brilliantly showcase some of the best sourced ingredients. Bradley has introduced the finest local and international produce available, such as Australian quality beef from Tasmania and fresh salmon from Sichuan Province, China.
In terms of seafood, Portman’s serves the freshest salmon from the China River directly to the table. In the area rebuilt after Sichuan Earthquake in 2008, sustainable mountain spring salmon is raised for three years until matured, and never leaves their fresh water environment to swim in the ocean - therefore giving them a unique crisp and fresh flavor. Each salmon is 100% clean, tested of all pollutants, toxins and growth hormones, giving it a gorgeous deep red color that is similar to wild salmon, while remaining leaner than farmed salmon.
In the same area, north-west Tasmania, the Hammond families have been breeding Wagyu on Robbins Island since the early 1990’s. When combined with Hammond families’ expertise in farming, the pristine environment and unique feed rations, Robbins Island Wagyu is featuring Beef Marble Scores of 7+. During the iconic seasonal musters, bands of horsemen swim the cattle through saltwater channels at low tide to move them peacefully between grazing areas. In addition, the herd has been selectively bred to carry the elusive ‘soft fat’ gene, traditionally sort after by the Japanese for its lower melting points and buttery mouth feel.
Cape Grim Beef is directly from the rich pastures of north-west Tasmania, which is the perfect place to grow superior beef, due to the clean air, pure water and fertile soil. Raised on rich pastures with nothing else added, Cape Grim Beef is hand-selected and rigorously graded, rewarding you with pure beef flavor – made by nature with rich nutrients including Omega-3, fatty acids, vitamin A and vitamin E.
Since 1990, The Portman Ritz-Carlton, Shanghai has become the iconic landmark in the ever changing city skyline of Shanghai.
