Portman’s Restaurant Reopens on January 1, 2018 with New Interiors
and a New International Culinary Experience
Shanghai, China – January 1, 2018 – The Portman Ritz-Carlton, Shanghai enters 2018 with the exciting reopening of Portman’s Restaurant on New Year’s Day following a soft refurbishment. As the focal point of dining and culinary excellence, the renewed Portman’s Restaurant features everyone’s favorite dishes with a creative twist from day to night, a concept that reflects comfort food through a combination of cuisine, decor and service.
Guests can enjoy a curated selection of culinary offerings for breakfast, lunch and dinner, with new signature dishes highlighting continental and pan-Asian inspirations, all prepared by a first-class culinary team led by executive chef William Wang and new executive sous chef Herwig Knapen. From January 8, 2018, Portman’s Restaurant launches its semi-buffet lunch offering complemented with beverage packages, and soon, the return of The Portman Ritz-Carlton’s renowned Sunday Brunch in April, 2018 that has become a local favourite in previous years.
Exuding a Scandinavian residential flair, the new Portman’s Restaurant features spacious, homey interiors and dining areas that invite guests to relax as much as one would in the comforts of home. Nordic-inspired furniture are in harmony with Bauhaus-esque lighting fixtures that illuminate the central dining area of the restaurant. At dusk, one’s culinary experience will be synchronized with modern beats where guests can unwind for pre-evening drinks before easing into a handcrafted a-la-carte dinner.
Portman’s Semi-Buffet Lunch
The semi-buffet lunch at Portman’s Restaurant comes with unlimited servings from an extensive appetizer and dessert spread that is enjoyed while one’s order of a main dish is being prepared a la minute. This is the perfect arrangement for busy executives with limited time who still want to enjoy an eclectic assortment of flavors.
Start with a selection of cold cuts, an assortment of salads, fresh seafood, and freshly toasted Panini with Parma ham and melted cheese. Select from the new continental main courses including Pan-Seared Halibut with a stew of clams; Roasted Salmon with a crisp golden brown skin and crusted potatoes; Free-range Chicken with shaved asparagus salad and truffle vinaigrette; Slow-cooked Pork Belly with mushroom salad, apple puree and smoked bacon dashi; Mushroom Risotto with wild mushrooms and Parmigiano-Reggiano; Spaghetti with tomato fondue, roasted eggplant and basil; and the natural grass-fed Cape Angus Tenderloin with king oyster mushrooms and shallot confit.
Guests can pair the semi-buffet lunch experience with a selection of fresh juices, milk shakes and iced tea, and linger longer with optional alcoholic beverage package with unlimited house wines, beer, juices and drinks, and non-alcoholic beverage package with unlimited juices and drinks.
Portman’s semi-buffet lunch is offered daily from 12:00pm to 2:30pm from January 8, 2018; and adjusted later to Mondays to Saturdays only when Portman’s Sunday Brunch returns. The semi-buffet lunch is priced at RMB168 plus 15 per cent service charge per person excluding beverages.

New Executive Sous Chef Herwig Knapen
Chef Herwig Knapen hails from Belgium with over 30 years of international culinary experience spanning across Asia including China, the Middle East, the U.S.A., Latin America and Europe. With an extensive background in pastry and bakery forming the foundations of his career, Chef Knapen continued to hone his skills with French culinary training. He played a pivotal role in co-managing large banquet operations and 14 outlets at the JW Marriott Marquis Dubai prior to joining The Portman Ritz-Carlton, Shanghai, with an active role in kitchen management and cost control. Chef Knapen extends his passion towards the guest experience and enjoys interacting and enhancing the lives of people he meets.
