Shanghai, China – March, 2019 – A vivid Mediterranean Epicurean Journey – “The Souk” has been transported to the heart of Shanghai every Sunday starting from 17 March at Portman’s Restaurant, The Portman Ritz-Carlton. With a regular menu rotation that will leave brunch fans spoilt for choices, The Souk Sunday brunch showcases a lavish selection of Mediterranean favorites and inspirations to be enjoyed with family and friends.
“The Souk means the market in French or Arabic for traditional ingredients and a place to sit down and enjoy local meals and snacks prepared and served with an exotic flair,” said Executive Chef Fabio. “As we continuously seek opportunities to innovate and improve The Ritz-Carlton experience,we’re very excited to introduce the essence of Mediterranean cuisine with a food market concept – where guests will be delighted with the freshness, flavors, variety of ingredients and authentic Mediterranean dishes.”

The Souk Sunday brunch menu features celebrated dishes along the Mediterranean coastline evolved over centuries with cultural influences from Greece, Southern Italy, Spain, Morocco and Turkey, to name a few.
A Mediterranean Epicurean Journey The magnificent Mediterranean feast features appetizing selections of cold items, salad and antipasto, seafood, cheeses and bread, signature hot dishes, carving stations, BBQs and a wide array of delectable desserts.
The Cold Section highlights Salmon Rillettes, Chicken Liver Parfait, Wild Mushroom Terrine, Feta Cheese and Watermelon, etc. Diners will be thrilled with the sumptuous selection of Salad and Antipasto featuring a great variety of salads, Beef Carpaccio, Grilled Octopus Escabeche, Dates Stuffed With Chorizo, Hummus, and more. Smoked & Marinated Fish Station includes Smoked Mackerel and Salmon, Marinated Salmon with Beetroot and Horseradish; Chilled Seafood Bar features Freshly Shucked Oysters, Poached Prawns, Marinated Green Shell Mussels and Clams, Steamed Crab, Whelk and Spicy Tomato Gazpacho.
Cheese lovers will be amazed with up to 16 selections of Assorted European Cheese and an extensive choices of Bread such as Cranberry and Walnut Bread, Onion and Cheddar Focaccia, Olive Bread, Apricot Hazelnut Sour Dough Bread and Pretzel, complementing with a Bouillabaisse Soup Station.The dining experience is replete with a mix of traditional and creative Mediterranean Sweet Indulgences such as Baklava, Chocolate Hazelnut Tartlet, Caramelized Vanilla Millefeuille, Old Fashion Pumpkin Pie, Salted Caramel Chocolate Cake, Macarons, Éclairs, Baci Di Dama, Meringue, Panna Cotta, Tiramisu, etc. Hot Desserts include Chocolate Pudding and Sticky Toffee Pudding.

Highlights include Slow Braised Beef Cheeks with Creamy Polenta, Pan Roasted Sea Bass, Lamb Casserole with Garlic and Fava Beans, Roasted Chicken with Honey and Tomato, Baked Sicilian Orecchiette with Sardines, Vegetable Moussaka, Ratatouille and Brandade De Morue. A Carving Station offers Olive Crusted Salmon with Lemon Butter, Apple Cider and Honey Roasted Leg of Lamb, and Rock Salt Roasted Rib Eye.
