Shenzhen, China – July 26, 2016 – Cooking relies chiefly on the quality of the seasonal ingredients. Authentic Italian cuisine is characterized by its simplicity and freshness. This July, Chef Stefano Nicodemo presents his newly designed à la carte menu, featuring authentic Italian dishes with a modern twist at the award-winning Italian restaurant, Paletto, at The Ritz-Carlton, Shenzhen.

Fresh from Napoli and bursting with Mediterranean flavors, the inaugural menu by Chef Stefano at Paletto showcases his modern approach to Italian cuisine. Highlighting red fish, king crab and panna cotta, this menu offers dishes that are light and yet richly defined by fine ingredients from his hometown.

“My passion for excellence comes through in the dishes I create. I often take the simple classics I grew up with and adapt or modernize them with interesting techniques and twists which I hope my customers will love. Not only are my ingredients in line with healthy eating ideas, but my cooking techniques also look to preserve the optimal natural goodness and taste. In fact, I often use “low-temperature cooking” techniques in order to ensure ingredients retain their inherent nutritional value,” says Chef Stefano. “Other than that, I will launch monthly special menus regularly according to the available seasonal ingredients we import from all over the world to indulge the diners’ taste buds.”

Guests are set to enjoy one of the best and most stylish dining scenes in the city with a range of artfully created dishes such as tuna belly “toro,” saffron panna cotta, Negroni caviar, pistachio; fresh king crab, avocado, barley, sour cream, lettuce, black ink sponge; and red fish risotto, bay leaf dust, lemon, salmon eggs, black olives—drawing on the extensive experience of Chef Stefano and intuitive service which The Ritz-Carlton is known for.
