The best white truffles—it is generally agreed—come from the Piedmont region of Italy, particularly around the town of Alba. They appear only from November to the end of December.

Using the rarest white truffles from Italy, Chef Stefano has created an à la carte menu devoted entirely to white truffle-themed appetizers, soups, main courses and desserts. With truffles, ninety percent of the time it is the aroma that helps to create the taste experience. They are very versatile. They combine and work with many different ingredients. The key is to match truffles with other flavors that are not overpowering,” Chef Stefano says. “I am pairing the truffles with fresh porcini in the new dishes. The subtle flavor of porcini works perfectly with the white truffles.”
