DALLAS, Texas – April 7, 2016 – You won’t have to travel to Mexico to experience the ultimate in Mexican fine dining this year, as Fearing’s Restaurant will offer some of that nation’s best food and spirits on Thursday, May 5, in celebration of Cinco de Mayo. The culinary event of the year will be highlighted by a guest appearance by Chef José Meza Arróyave, representing the famed Restaurant Carolina at Mexico’s St. Regis Punta Mita Resort.
Chef Meza’s Mexican Contemporary cuisine modernizes his culture’s traditional culinary origins, and his three-course celebration menu at Fearing’s will showcase this cuisine throughout the evening of May 5. The dinner will start with an extraordinarily prepared Quesadilla unlike anything offered in the U.S. and composed of crunchy blue maize filled with artisan Oaxaca cheese. Further courses will feature a freshly-crafted Ceviche de Pozole Verde, traditional Mexican Carne Asada in homage to a typical Mexican barbecue and, for dessert, a simply sweet delicacy of Mexico’s beloved Arroz con Leche.

Chef José Meza is celebrated throughout Mexico for his use of modern techniques, traditional preparations, local and regional suppliers, and cultural authenticity to push the boundaries of fine Mexican cuisine. He grew up in Mexico City, spending Sundays in his grandmother’s kitchen and, after earning a degree in gastronomy, began his career working under Michelin-Star chefs Martin Berasategui and Bart de Pooyer, and for Rene Redzepi at Noma in Denmark, ranked No. 1 in the world by the prestigious San Pellegrino Restaurant list.
Meza later returned home, forming part of the kitchen team at world famous Pujol where, under the watchful eye of Chef Enrique Olvera, he developed his passion for traditional ingredients, learning the techniques and recipes that would forge his love of Mexican cuisine. At the age of 24 he was offered the opportunity to lead a new Enrique Olvera project, this time in San Miguel de Allende, at the much acclaimed Moxi. At The St. Regis Punta Mita Resort, José Meza leads the culinary offering for Carolina Restaurant, enriching and redefining the category of traditional Mexican cuisine, rich in heritage, tradition and flavor. Carolina Restaurant has carried a AAA Five Diamond rating since its opening in 2008 and continues to be only gourmet Mexican restaurant holding this prestigious award.
There’s more planned for May 5 at Fearing’s, though. Patrón Spirits will be on hand to present optional tequila pairings to accompany each course of the holiday menu, while the restaurant’s Rattlesnake Bar will offer a seasonal new Meyer Lemon Margarita, using its exclusive Barrel Select añejo tequila -- a co-creation of Fearing’s Restaurant and Patrón. The limited-edition cocktail is designed by Patron’s own David Alan, who explains, “"The drink is delicious. The creaminess of Meyer lemon curd complements the vanilla profile of this hybrid barrel Patrón Añejo, and the resulting drink is a silky, citrus-tart dream of a Margarita.” For cocktail aficionados, a special guest bartender will also be on hand to mix throughout the evening.
