Contemporary patisserie & café opens at The Ritz-Carlton, DIFC, that’s all about cake
Dubai, UAE, 13 October 2014 - The clue is in the name with ‘Cake’, the new contemporary patisserie and café that opens this month at The Ritz-Carlton, Dubai International Financial Centre, with a simple philosophy and mission; to be all about cake, and great cake at that.
Executive Pastry Chef Dragan Rucnov is the creative force behind the elegant menu of cakes, pastries and cookies, handmade each day using only the freshest, highest quality ingredients. Teas, coffees, juices, milkshakes, smoothies and a select range of fresh sandwiches and salads are also available from 6am until midnight every day, with Cake serving breakfast, lunch and of course cakes, around the clock to eat in or takeaway.
The cake collection features an assortment of classics as well as mousse cakes, pastries and tarts, and seasonal ingredients are integral, with chestnuts, apples, pears and hazelnuts featuring heavily in the current Autumnal offering. Favorites of Chef Dragan include the moist Chocolate Caramel Pecan Fudge Cake, Date Delight, a date and walnut cake with Valrhona chocolate cremeaux and caramel mousse, Lemon Yuzu Meringue Tart, and a classic Carrot Cake with apple, walnuts and traditional cream cheese icing. Quirkier choices include the innovative Tiramisu, served in an old-fashioned jar, Strawberry Pinky, a layered vanilla cake with hazelnut crunch, orange blossom cream cheese mousseline, strawberry mousse and strawberry jelly, and White Chocolate Cheesecake, designed to look like Swiss cheese.
The jewel in the crown is undoubtedly The Ritz-Carlton Cake, the result of a global contest that saw 23 Ritz-Carlton chefs from across the globe competing to create the ultimate cake that carries the history of The Ritz-Carlton on its sugared shoulders. The result; a decadent chocolate cake with Valrhona Coeur de Guanaja chocolate sponge, and Valrhona Caraibe ganache infused with candied orange peel and Grand Marnier , served in Cake as a single slice or as a full cake presented in an ornate box, perfect as an elegant gift.
The décor and ambience of the patisserie in Dubai are chic and stylish yet casual, warm and relaxed. The European design, including grey velvet sofas, marble tables and deep purple curtains, is complemented by subtle Middle Eastern touches including ‘dallah’ or Arabian coffee pots suspended from the ceiling, and a decadent display of cakes and pastries greets guests on arrival, reminiscent of an elegant jeweler’s window.
