Chef Gavin Pera has drawn accolades for his work as executive chef of Burlock Coast at The Ritz-Carlton, Fort Lauderdale. Chef Fabien Gnemmi is the hotel’s secret weapon in the kitchen; the machine behind the bustling property’s daily food & beverage and massive banquet and special event operations. The two are a culinary dream team and close collaborators but on Thursday, July 27 the duo will go apron-to-apron in a special one-night-only Chef Battle. “Competition in the kitchen is serious,” says Pera. “It keeps you on your toes and your skills sharp. Fabien and I live to push and challenge each other and this Chef Battle is our way of having a little fun while we’re looking to show each other up.”
Open to the public, the dinner will task the chefs to create three dishes each – appetizer, entrée and dessert – with the same key ingredients. Diners will try each course and vote for their favorite with the winning chef taking two out of three rounds. To add a little drama, the dining room will be turned into a close captioned “kitchen stadium” with large TVs brought in for diners to watch things heat up in the kitchen. The event, priced at $75 per person (excluding tax and gratuity) begins at 7 p.m. sharp with a complimentary cocktail reception, dinner at 7:30 p.m. A VIP seating option with paired wines will also be on offer for $95 per person. Joining the public in crowning the evening’s top toque will be three distinguished judges: YELP Broward Community Manager Blue Arausz; Miami New Times food scribe Nicole Danna and VENICE magazinepublisher Carlos Suarez.
