AG’s “Perfect Negroni” was conceptualized by Assistant Food and Beverage Director Diego Gentili, who draws inspiration for the restaurant’s innovative cocktail program from his ancestry and what he learned from his grandmother in Rome.
The backstory is that Gentili’s country house outside of Rome used to have a vineyard that his great grandfather was looking after, where he had a cave for wines with barrels, shelving, and more. Diego’s grandparents came up with the Negroni recipe after his grandmother had a friend from Portugal visiting, who brought a bottle of port. They tried the bottle one day and thereafter made a Negroni in the same glass that they had tried the port, and found the cocktail to be less bitter. Gentili learned how to make the Negroni and served the cocktail to his grandparents’ friends when they had company. He has brought this inspiration to AG where guests can now taste his ‘Perfect Negroni.'
The recipe for the cocktail calls for equal parts of Old Tom Dry Gin, Carpano Antica Sweet Vermouth, and Campari, garnished with an Orange Peel. In AG, they mature the Negroni in a barrel that has been washed with port and then bottle the ingredients for serving.
“The ‘Perfect Negroni’ is very special to me and I love to see guests enjoying it at AG,” said Diego Gentili. “It’s wonderful to participate in National Negroni Week to drive awareness of the beloved cocktail as well as contribute to The Giving Kitchen and the great work that organization does daily.”
The “Perfect Negroni” is available on AG’s cocktail menu daily, alongside specialty Gin & Tonics, Martinis, and Classic drinks. AG is open seven days a week for breakfast, lunch, and dinner, and recently opened its outdoor Veranda for alfresco dining with a downtown view.
