BANGALORE, January 2017: The Lantern at The Ritz-Carlton, Bangalore is all set to ring in the Year of the Rooster this Chinese New Year.
Since the entire Chinese New Year period is marked by convivial family dining, guests will be welcomed with a sumptuous fare during this time. It is customary to have one big family dinner with extended relatives joining in for possibly the biggest dinner of the year around this time. Families dining will be treated to some typical Chinese delights.
Yee Sang or the prosperity salad is a traditional dish which the family tosses for good luck, prosperity, health and all things auspicious. Our chefs will have julienned carrot, cucumber, radish, bell pepper, pickled ginger, fried wonton, green onion, coriander leaves, mandarins and oranges, smoked salmon, toasted peanuts, toasted sesame seeds with a ginger plum dressing as the prosperity salad.
An array of dumplings like the Three Star Vegetable Dumpling, Bokchoy Mushroom Dumpling Prawn and Scallop Dimsums will set the note with more traditional dishes to follow suit like the Pan Fried Radish Cake which is almost ritualistic of this time, Seafood Shenjin Bao and Tenderloin Cheung Fun or the carefully prepared Twice Cooked Lamb Shank in Sichuan Pepper Broth. The Chinese believe that eating fish -served whole, will bring prosperity in the new year and we have the Steamed Fish with Fragrant Black Bean sauce that can be shared with friends and family.
Where there are friends and family celebrating with a festive meal, there has to be celebratory desserts. Sesame Seed Balls with almond jelly, silky Mango Pudding with Peanut Brittle for a crunch or the traditional Egg Custard Tarts to wash down with fragrant jasmine tea will be sweet ending options to the meal.
