KAPALUA, MAUI, HI – December 26, 2017 – The Ritz-Carlton, Kapalua – a AAA Five Diamond Resort and recently named one of the top ten resorts in Hawaii in 2017 by the discerning readers of Condé Nast Traveler, is pleased to announce exciting updates for its signature restaurant, The Banyan Tree. In addition to receiving AAA Four Diamond Award recognition, the locally inspired restaurant is elevating its culinary offerings with new menus, internal promotions, and an exciting upcoming transformation.

The restaurant’s use of seasonal ingredients sourced from local farms and the resort’s own two-acre organic garden, in addition to the inventive dishes and impeccable service have earned The Banyan Tree its coveted AAA Four Diamond Award. Known for its farm-to-table foundation, the resort’s oceanfront restaurant has served guests immaculately prepared, Hawaiian-inspired cuisine under masterful Head Chef Alvin Savella and Executive Chef Daniel Schmidt. Now promoted to Director of Food and Beverage, Schmidt will expand his leadership role within the resort’s culinary team to continue providing guests with the finest dining experiences.

Stepping into Schmidt’s previous role, former Executive Sous Chef Kenneth Sniffen has been promoted to Executive Chef. Bringing his extensive culinary experience with the resort to his new role, Sniffen, Savella and their team have created a new menu that draws from his childhood experiences growing up on the island. From diving for seafood with his fisherman father to gardening with his grandparents, Sniffen’s intimate knowledge of Hawaiian cuisine and local flavors make him uniquely qualified to create exquisite dishes with an island flare. A sampling of new menu items include: Grilled “He’e” Octopus, Kona Kampachi Crudo, House made Char-Siu Glaze Ahi, Kona Lobster Carbonara, and Huli Huli Chicken. With a strong team of creative leadership, The Banyan Tree will continue to focus on crafting unforgettable experiences through the dishes it serves, all with local fresh produce and Hawaiian coastal seafood.

Alongside The Ritz-Carlton, Kapalua’s resort-wide transformations debuting in the coming year, The Banyan Tree will also be unveiling a new design and bar expansion in 2018. Guests can look forward to island-inspired guest accommodations, reimagined to reflect Maui’s natural beauty, as well as an enhanced lobby experience designed to reflect the power of the elemental forces of nature. Additionally, the resort will be introducing the new Kai Café, new poolside cabanas, and fresh landscaping throughout the pool area with a design that is thoughtful and authentic in a setting that reflects a true sense of Maui.
