Laurent Tourondel is not just a French chef, but also a famous restaurateur with many establishments in New York and other cities around the world. During his latest trip to Kazakhstan, Laurent visited LT Bar and Grill restaurant in Almaty where he made changes to the menu. It has now been expanded to include new dishes, such as skirt steak, Arctic char, seafood ravioli and Amaretto cake.
For guests of The Ritz-Carlton, Almaty from around the world, LT Bar and Grill has become a favorite place for fans of American cuisine and dishes from Laurent Tourondel. The restaurant, which sits on the 28th floor of the tallest building in Almaty, offers visitors a panoramic view of the evening cityscape.. All of the dishes – both new and classics on the menu – are made exclusively from local fruits, vegetables, and spices, complementing the menu with seasonality and a taste of ingredients from the local Kazakh cuisine. Chefs buy these products at Almaty’s Green Bazaar, which has been supplying the city with fresh fruits and vegetables for more than 140 years, hence the name “Green.”
Laurent says that he always focuses on the traditional part of cooking, the basics of which allow him to use new creative ideas without repeating the styles of other chefs. “At one time I didn’t cook; I travelled and explored the cuisines of other countries. And now I draw inspiration by subscribing to many culinary magazines from all over the world which allow me to feel the trends, needs and wishes of customers from any part of the world,” he says.
Tuna tartare with osetra caviar and rib eye steak, along with almost all the dishes from the sushi bar, are the most well-loved dishes on the restaurant’s menu in Kazakhstan, Laurent says. The restaurant’s specially baked bread with seven kinds of pepper and gruyere cheese is deserving of special attention and has become LT Bar and Grill’s hallmark appetizer.
Laurent Tourondel regularly visits his restaurants all over the world, carefully monitoring that the high cooking and serving standards are maintained. This was Laurent’s seventh visit to Almaty and this time it coincided with the ‘Celebrate The Senses’ culinary festival, where he presented some of his ideas for the new menu at dinners and master classes for guests. LT Bar and Grill is currently one of the 14 LT-branded restaurants of Laurent Tourondel, which are also located in the US, Hong Kong and Puerto Rico.
