CANCUN, QUINTANA ROO – NOV 30, 2015 – The Ritz-Carlton Hotel Company L.L.C., the iconic leader in luxury lodging centered on creating and celebrating life’s most memorable journeys, is thrilled to announce the appointment of Mr. Gregorio Oy Cahum as Chef of Fine Dining in The Club Grill at The Ritz-Carlton, Cancun.
A native of Tixacal, Mexico with more than 14 years of hospitality experience, the Chef re-joins The Ritz-Carlton, Cancun after serving as sous chef of the Tamarind fine dining restaurant at the Banyan Tree Mayakoba. Prior to this, Chef Gregorio was a member of the leadership team of the AAA 5-Diamond Fantino, also located at The Ritz-Carlton, Cancun. Joining Fantino in 2002, it was here that the Chef’s passion for specialty restaurants grew into maturity.
Growing up in a family-oriented environment, Mr. Cahum was surrounded by homegrown colors, scents, and meals full of authentic Mexican sazon. At the age of 15, Mr. Cahum knew the kitchen would become his home and has grown into a Yucatan artisan since that time. He now assumes creative responsibility and leadership for the second of The Ritz-Carlton, Cancun’s AAA 5-Diamond award-winning dining rooms, the Club Grill.
