Lightkeepers,the casually elegant new restaurant and bar housed in The Ritz-Carlton Key Biscayne, Miami will be a beacon for foodies and craft cocktail aficionados when it opens its doors just off the island’s gorgeous waters March 2017. Named as an homage to the lighthouse keepers who watched over Key Biscayne’s historic Cape Florida Lighthouse dating back to the 1800’s, Lightkeepers will feature a contemporary, coastal-inspired dining room; a cool, casual indoor/outdoor bar and a beverage program featuring unique, hand-crafted cocktails. Executive Chef Raul A. Del Pozo will helm the kitchen. Del Pozo is a talent with a deft hand in the kitchen and a whimsical spirit. For Lightkeepers, he has developed an inviting menu influenced by the abundance of fresh seafood sourced from the southern waters of Florida and the fertile soils of the Florida Keys, northward. With cheeses from Winter Park, beef from Ocoee, and snapper from Key West, locally grown and caught ingredients are key to the quality and diversity of the menu.
The menu is set to include a Beet and Burrata Salad – raw and roasted beets, heirloom cherry tomatoes, foraged mushrooms, pumpkin seed oil and locally made burrata; Yellowfin Tuna with pickled shimeji, radish, cucumber, soy cure; and Grilled Salmon with roasted corn and snap peas, with a cucumber verjus. “The menu at Lightkeepers will hit all the right notes but will have a playfulness and inventiveness about it,” says Del Pozo. “Diners are looking for surprises but much can be said about the value of comfort. We use modern cooking techniques and charcoal and wood burning Josper ovens to enhance flavors.”
The ingenious cocktail program will be inspired by Florida’s rich history. El Farito, “the little lighthouse,” is comprised of St. Pete Gin, St-Germain Elderflower Liqueur, fresh-pressed lime juice, house-made cranberry juice, mint and cucumber-infused simple syrup; The Tequesta, named after the Tequesta Native American tribe of Florida, who called the Island of Key Biscayne home for thousands of years, is made with Gracias A Dios Mezcal, fresh-pressed grapefruit and Three Chiles syrup. The John W.B. Thompson Smoked Old Fashioned, named after an assistant lighthouse keeper circa 1836, is made with Ron Cartavio Rum 12 Years, La Phroaig Islay Scotch, Santa Teresa Rhum Orange Liqueur and orange bitters.
Lightkeepers is scheduled to open to the public March 2017. Breakfast, lunch and dinner will be served daily; brunch in the works.
