Following a soft refurbishment, Sharq Village and Spa introduces a new culinary concept at Al Dana with new chef de cuisine Evangelos Liakouris, who takes helm at the signature seafood restaurant starting January 2016. Chef de Cuisine Evangelos Liakouris / With over 12 years culinary experience, Chef Liakouris who hails from Greece will spearhead the Al Dana kitchen brigade with the introduction of Ikaria-inspired cuisine in the hotel. Blue Zone Ikarian diet, renowned as the best-kept secret to longevity, is the foundation to Chef Liakouris’ creative renditions, whereby fresh vegetables, fish and seafood, and the use of Mediterranean herbs and olive oil are essential to his brasserie-style healthy food concept.
“Growing up in Ikaria, I’m inspired by fresh produce and a healthy diet as a way of life. This is the basis of my food philosophy, with respect towards traditional recipes that are given an innovative twist,” says Chef Liakouris.
Chef Liakouris’ creative renditions of Mediterranean cuisine are evident from his extensive tenures gained from working in luxury hotels in Greece, as well as at a restaurant consulted by Alain Ducasse. He also participated in seminars with Joan Roca, Gaston Acurio and David Munoz in Madrid, and staged at one Michelin star restaurant Constantin Fillipou in Vienna. Chef Liakouris has consistently maintained five-star ratings with his previous hotels and believes in stringent food quality and hygiene standards in the kitchen.
. Signature Dishes at Al Dana / The restaurant will feature contemporary Ikarian-inspired Mediterranean fish and seafood. Signature dishes include Greek Salad with Sardines, Shrimp Saganaki and Evangelos Black Forest Cake. Inspired by local produce such as hammour fish, Chef Liakouris recreates the popular Fish Tagine dish with his signature approach.
