Happening in The Grand Ballroom for the first time is “A Grand Reunion” Celebration. Gather your loved ones and renew familial ties over an indulgent eight-course set dinner in our majestic Grand Ballroom. Culinary highlights include the double-boiled superior chicken consommé, wok-fried king prawn roll with Shanghai bean sauce, and a salmon yu sheng to toss to a year of good fortune. The melodic sounds of a two-piece Chinese instrument ensemble will provide ‘live’ entertainment. All diners will receive a set of exclusive Ritz-Carlton red packets, and a pair of Mandarin oranges in a carrier bag.

Summer Pavilion

Executive Chinese Chef Cheung Siu Kong of the One Michelin Star Summer Pavilion (夏苑) invites you to welcome the auspicious Year of the Rooster with an array of specialty dishes. Toss to a fresh start with Summer Pavilion’s Japanese sea urchin and blue fin tuna yu sheng (日本海胆蓝鳍吞拿鱼捞起).

Currently in season, Japanese sea urchin was specially selected by Chef Cheung for its more robust flavour and firmer texture, which gives the traditional Chinese julienned salad a unique and palatable twist. Available for both dine-in and takeaway, the Japanese sea urchin and blue fin tuna yu sheng platter is priced at SGD 138 for a small portion (serves four persons) and SGD 276 for a large portion (serves eight persons).

Among the Lunar New Year highlights, the baked fortune chicken with abalone, shredded mushrooms and preserved vegetables 金鸡齐报喜 (鲍鱼荷香富贵鸡) is served in a gold-dusted charcoal bun. A delectable aroma escapes as the bun is sliced open, revealing the delicacies within. Symbolising a year full of abundance and wealth, this dish is priced at SGD 180 for six persons. An advanced order of one day is required.

Pen cai, a delicacy featuring 12 luxurious ingredients such as abalone, fish maw, prickly sea cucumber, sea perch, roasted pork, roasted duck, goose webs, Chinese mushrooms, conpoy, black moss, scallops and seasonal vegetables, completes the epicurean spread at your reunion table. Available for dine-in and takeaway, each pen cai is priced at SGD 380 for a small portion (serves four persons) and SGD 760 for a large portion (serves eight persons). An advance order of three days is required.

Summer Pavilion’s six exquisite private dining rooms are the perfect setting for hosting your reunion celebrations. The Garden Suite, which is the largest, can accommodate a private party of up to 30 guests. Five to eight-course set lunch and dinner menus are priced from SGD 78 per person. Diners celebrating the first 15 days of the Lunar New Year at Summer Pavilion, will receive a set of exclusive Ritz-Carlton red packets, and a pair of Mandarin oranges in a carrier bag.

Colony

Savour the best of Singapore’s heritage cuisines coupled with Lunar New Year highlights at seven conservatory kitchens helmed by ‘live’ culinary showmanship. Highlights include traditional yu sheng, drunken prawns, sea whelk noodles in superior chicken broth, oriental-spice roasted pork belly and “nian gao” crepe.

On Friday, 27 January, the Lo Hei reunion dinner is priced at SGD 198 per adult and includes a glass of prosperity mocktail, unlimited pours of vintage sparkling wine, house pour red/white wines, draft beer, chilled juices and soft drinks.

Guests looking to take the festivities up a notch can indulge in a Lo Hei Vintage Champagne Brunch on Sunday, 29 January where freshly shucked oysters, Colony-style lobster, beef wellington with truffle sauce, and assorted Lunar New Year goodies await. The Lo Hei Vintage Champagne Brunch is priced at SGD 188 per adult and includes unlimited pours of Moët and Chandon Grand Vintage Blanc 2006 and Rosé 2006.
