Mr. Martin Villareal, mixologist at Chihuly Lounge, and the creative mind behind ‘Make Gin Great Again’ shares that, “American gins are flavoured with a variety of botanicals such as fruit, citrus or floral ingredients which allow them to be paired with uniquely flavoured tonics and bitters. The four cocktails we have created range in taste and aroma, and lend a twist to the classic Gin and Tonic.”
Grapefruit tonic, lavender bitters, grapefruit slice, lavender flower
Made using fresh citrus peels, this Brooklyn gin has prominent floral and slightly bitter citrus notes.
Death’s Door Gin
Tonic water, coriander bitters, lemon wedge
Combining three simple botanicals; juniper, coriander and fennel, this gin is clean and refreshing on the palate.
Tonic water, cardamom bitters, cardamom seed, lime wedge
Zesty and citrus to the nose, this gin contains well balanced flavours with a hint of spice.
St George’s Gin
Yuzu tonic, lemon bitters, lemon wedge, rosemary
With scents of the forest such as pine, sage and fir, this earthy gin is very smooth on the palate.

Chinese Executive Chef Cheung Siu Kong presents a palatable selection of dishes in his newly crafted tasting menu. Culinary highlights include the sautéed lamb loin with morchella and truffle sauce, double-boiled clam superior soup with bamboo bith, and pan-fried Canadian lobster meat with fried buns.
