SINGAPORE – 16 November 2016 – In celebration of the festive season, The Ritz-Carlton, Millenia Singapore is delighted to present a handcrafted selection of specialty log cakes conceived by newly-appointed Pastry Chef, Benjamin Siwek, as part of the rich Christmas food tradition.

Perfect accompaniments for your year-end parties and gatherings with loved ones, Chef Benjamin drew inspiration from his childhood memories of Christmas in France, to conceptualise the theme for his festive creations.

Each log cake embodies a nostalgic element of the holiday season close to Chef Benjamin’s heart – the white chocolate snowflake decorated “Joy” evokes memories of him catching the first snowfall on Christmas morning, while the traditional looking yule log, “Warmthreferences the  fireplace during winter where he spent time sharing stories and festive goodies with his family. The fiery chocolate flames of “Loverepresent passion and familial ties that are renewed during the festive season, while the earthy green “Peace” log references the start of a new year and beginnings. The gold star dusted “Hopesymbolises good luck and well wishes for the year ahead.

Presented in a limited edition vintage chest, the Colony Hamper is filled with an assortment of sweet and savoury traditional goodies such as Christmas fruit cake, stollen, chocolate pralines, salmon gravlax, foie gras au torchon and spiced hot chocolate, making this the perfect gift for business associates or loved ones.

These gourmet festive takeaway items will be available exclusively at The Bakery in Colony (level three), from 26 November 2016 to 1 January 2017, 10 a.m. to 10 p.m. daily. Take a step back in time and journey through Singapore’s culinary heritage, while you enjoy a leisurely afternoon tea at Colony.

Relish savoury highlights inspired by Singapore’s heritage cuisines including Chinese, Western, and local dishes, which are served in a five-tier ceramic tiffin, also known as ‘tingkat’ in the Malay language. These include the steamed charcoal xiao long bao with baby abalone, mini lobster thermidor, pumpkin cake with chilli crab sauce and beef parmentier, which pair perfectly with Champagne.

The afternoon tea journey continues as you delight in Colony’s custom tea blend with a choice of tea syrup enhancement such as pandan or French rose, complemented by unlimited servings of desserts at The Patisserie.

Savour set menus crafted by Chinese Executive Chef Cheung Siu Kong with signature dishes that include the slow-cooked Canadian lobster with steamed vermicelli in crustacean stock, baked sea perch with hoi sin sauce, and braised superior bird’s nest with morchella in brown sauce.

SUPER NIGHT

To be held on Saturday, 31 December from 7.30 p.m. to 1 a.m., the final instalment of The Ritz-Carlton, Millenia Singapore’s inaugural “Super Series” – Super Night will see the entire lobby including Colony and Chihuly Lounge transformed into an extravagant black-tie event as we count down to a brand new year in style.

The extensive eight-course set dinner will feature culinary highlights by Executive Chef Massimo Pasquarelli and his team such as the poached langoustine with fresh Japanese sea urchin, onsen egg with girolle mushroom ragout and truffle lava, guinea fowl consommé with homemade foie gras cappelletti and char-grilled wagyu tenderloin.

ANNEX A – PROFILE OF CHEF BENJAMIN SIWEK

Benjamin Siwek has been appointed Pastry Chef at The Ritz-Carlton, Millenia Singapore where he will oversee pastry and bakery operations, and menu creations for Colony, Chihuly Lounge, the Ritz-Carlton Club Lounge, hotel banquet and catering events.

Prior to joining The Ritz-Carlton, Millenia, Chef Benjamin was the Executive Pastry Chef at dB Bistro & Oyster Bar in Marina Bay Sands. He began as an apprentice of Pastry Chef Christelle Brua at the Three Michelin Star Le Pré Catelan in Paris, before progressing to Pastry Cook at the world renowned Hôtel de Crillon Paris. In 2010, after a trial in the pastry kitchen of DANIEL in New York, Chef Benjamin was offered a Sous Chef position at db Bistro Moderne at the JW Marriott Marquis Miami. In 2012, he was promoted to Executive Pastry Chef at db Bistro & Oyster Bar in Marina Bay Sands Singapore.

A classically French trained pastry chef, Chef Benjamin possesses a vocational degree in Baking and Pastry Arts from the Ecole de Paris, des Metiers de la Table, du Tourisme et Hotellerie. Having gleaned a wealth of experience working internationally, Chef Benjamin is well known for his signature pastry creations which utilise seasonal ingredients from around the globe while incorporating local produce, to create an unforgettable dessert experience.
