Michelin Mastery, Guest Chefs & Heritage Feasts under a Sizzling Winter Sun in Tenerife
Tenerife – 29 September, 2017, The festive season at The Ritz-Carlton, Abama has become a renowned celebration, each year offering an unrivaled culinary journey through the seasonal calendar. The resort’s stable of world renowned chefs and restaurants, holding a combined three Michelin stars, ensures the wow-factor for foodies, whether looking for a little Christmas escapism or those embracing traditions whole-heartedly.
The host of the official announcement of the 2018 Michelin guide to Spain & Portugal and gala event, taking place in November 2017, is no stranger to the globe’s most respected chefs and industry aficionados, and guests this year will dine in the footsteps of many inspired culinary masters.
From the 22nd December, the Christmas tree shines bright, decked with magic, and launches the season with carols by candle light in The Ritz-Carlton Abama’s elegant lobby. This year ‘The Tree of Wishes’ will also be laden with envelopes inviting visitors to make a donation to the island’s Casa Cuna orphanage or ‘Sacred Heart Home’, providing a christmas gift, of the shelter’s choice, for the children.
Christmas Eve Perhaps the most vibrant day in the island’s Christmas calendar, will see the resort come alive with each of its celebrated restaurants crafting bespoke a la carte seasonal menus. From grass roots Spanish cooking at Martin Berasategui’s Txoko including stewed pig cheeks, ‘Merluza en Salsa Verde’ and ‘Croquetas’; the finest Japanese fusion from chef Daniel Franco at the resort’s one Michelin star Kabuki restaurant, to the heart melting classic Italian dishes at Verona and the finest seafood at the poolside El Mirador.
At the hands of eight star Michelin chef Martin Berasategui and his executive chef Erlantz Gorostiza, epicures will enjoy a Christmas Eve menu well worth the air miles at the two Michelin star M.B restaurant. A tailored tasting menu will include a journey of flavours reflecting the chef’s inspired interpretations of gourmet cuisine. From teasers of Andalucian crunchy crepes washed down with a passion fruit whisky sour, to Berasategui’s innovative dish of sea bass taco rested on marinated barnacle sauce, coriander pesto, hollow zucchini and crispy egg yolk. This festive gastronomic spectacular will be beautifully paired by M.B’s sommelier selecting the finest Spanish wines and French Champagnes.
With exceptional choices to suit every taste, the ballroom at The Ritz-Carlton, Abama will play host to a lavish Christmas Eve buffet. For an injection of tradition, roast turkey with sage sauce and apple chutney won’t disappoint, while options of smocked duck and fennel, foie-gras royal, oysters and caviar will satiate epicurean appetites.
Christmas Day Feast The Ritz-Carlton, Abama’s stable of gourmet chefs will come together to craft an indulgent Christmas Day dinner in the resort’s ballroom. Dishes will include Iberian ham, ceviche and gravalax, rosemary roasted leg of lamb, roasted entrecote, sea bass, rose and raspberry eclairs, and chocolate and orange financier cake.
New Year’s Eve Michelin Pool Party
A poolside treat is in store for New Year’s Eve, with a gala dinner under the award-winning clear skies of Tenerife, flanked by the Moorish architecture of The Ritz-Carlton, Abama and set within its lush tropical gardens. Combining treats from the resort’s stable of gourmet venues, lavish stations will serve oysters, ceviche, local cheeses, Iberian ham, and from the kitchens of Martin Berasategui’s M.B restaurant, plated dishes will include roasted sea bass on a bed of truffle onion and violet mustard and grilled beef fillet with creamy potato puree, terrine of Iberian bacon and périgueux sauce.
Guest Chef & Alternative Christmas Feasts For those in a tropical state of mind and searching escapism from a trad Christmas, The Ritz-Carlton, Abama’s Beach Club overlooking its secluded sandy beach and crystal clear waters, will host a Paella Beach Party serving up a vibrant menu of Paellas from the 26th December to the 3rd January. Live cooking using local ingredients sourced from the mainland and across the island will envelop the senses, to be enjoyed sizzling under the African sun.
To ensure the celebrations extend well in to the new year, The Ritz-Carlton, Abama invites five Michelin star chef Paco Pérez to join César González, Executive Chef at its El Mirador restaurant, to create a limited edition menu. In residence on the 4th January only, this exclusive event will showcase the world celebrated cuisine of Pérez famed of his Miramar restaurant in Girona, Enoteca in Barcelona and 5 Cinco in Berlin, fused with resort’s in house talent, once trained under Pérez. In this unique menu guests will see a combination of signature dishes from each chef, including sea urchins followed by seabass and harvested peas and seaweed from Pérez, and a red fig and prawn gazpacho from González topped by an elegant coconut and pepper dessert finale.
The Christmas Trimmings Throughout the holidays The Ritz-Carlton, Abama will offer a host of activities to satiate the appetites of all guests. A Christmas market at the foot of the resort’s citadel building will be curated with a selection of artisan treats from around the island, and at Ritz Kids, a fun packed programme will keep junior guests entertained. Ritz Kids’ New Year’s Eve event will include dinner, cinema, stargazing and a fun-filled overnight camp topped off with a ‘New Year’s Magic Breakfast’. Meanwhile for adults who like to party, the resort will take New Year’s Eve underground, and in to the early hours, with an international DJ to welcome in 2018.
