Tenerife – July, 2016 – The Ritz-Carlton, Abama is delighted to announce the launch of Martin Berasategui’s second restaurant at the Canary Island hideaway. Introducing TXOKO, based on a traditional concept from the Basque country, the new restaurant, opening on the 21st July will introduce an experimental take on traditional Spanish cuisine, embracing the celebration of exceptional food with loved ones and family, in the most heartwarming of environments.
At the hands of chef Berasategui and his Executive Chef Erlantz Gorostiza, TXOKO will introduce authentic Spanish gastronomy and hospitality at its very best. Berasategui comments “Txoko is a place where we cook for family and friends, inspired by precious childhood memories of time at my parents’ restaurant Bodegón Alejandro, a legendary legacy and proudly one of San Sebastian’s culinary institutions. TXOKO will be a temple to the finest produce, materials and culinary nostalgia, a place to meet the people we choose and love to share unforgettable moments.”
Born of 40 years’ gastronomic excellence, TXOKO will present a menu of impressive culinary work from Berasategui. Characterised by the chef’s trademark stamps of creativity, invention, profound understanding of flavour and deep respect for ingredients, with Erlantz Gorostiza at the helm, the restaurant will offer a winning combination. Berasategui’s inspired interpretations of gourmet cuisine have made him a household name throughout Spain and the rest of the world, holding a phenomenal seven Michelin stars. Gorostiza trained with Berasategui at the chef’s Restaurante Lasarte and offers his own exceptional culinary style and standards adding his own innovative twists to the menu at TXOKO.
Elevating heritage Spanish dishes such as stewed pig cheeks, ‘Merluza en Salsa Verde’ and ‘Croquetas’, guests will experience an imaginative journey of taste yet starting with the grass roots of Spanish cooking. Nostalgic undertones are inspired by the dishes of Berasategui’s Mother and Aunt, transporting guests to the heart of the family kitchen, and incorporating the finest seafood, Galician meat and hand-selected vegetable ingredients. A delicate combination of diverse flavours, starting with simple Spanish traditions are set to both surprise and warm the heart.
With heavy influences of Spanish culture and spirit, the new restaurant will offer guests a space designed to embrace the love and performance of eating. Long trestle tables of walnut wood inspired by buzzing taverns sit within a fresh and contemporary design, incorporating crystal accents and black and white geometric ceramic tiling. A bar area will welcome guests to enjoy pinchos and tapas and TXOKO’s wine cellar will offer the perfect accompaniment to its menu.
