At the hands of seven star Michelin chef Martin Berasategui and his executive chef Erlantz Gorostiza, epicures will enjoy a Christmas Eve menu well worth the air miles. A tailored tasting menu will include a journey of tastes reflecting the chef’s inspired interpretations of gourmet cuisine.
From teasers of Paella crackers and lentil and cumin biscuits washed down with a Passion fruit whisky sour to an aperitif of caramelised millefeuille with smoked eel, foie-gras, spring onion and green apple. Berasategui’s signature dish of truffle gelatin on a bed of smooth foie-gras cream will make an appearance followed by a delicate liquorice ice cream with black olive sand topped with pumpkin and vanilla cream. This festive gastronomic spectacular will be beautifully paired by M.B’s sommelier selecting the finest Spanish wines and French Champagnes.
New Year’s Eve will celebrate Silvester’s night at The Ritz-Carlton, Abama’s M.B restaurant, traditionally known as the feast of Pope Sylvester. A menu crafted for occasion will inject optimum sparkle. Courses within this celebratory tasting menu will include M.B’s signature caviar ‘M.B – Riofrio Excellsius’ served over a corn sour cream, Pickled oyster with cucumber sake slush, pickled shallot and sea mist, Beef fillet "Luismi" on a bed of terrine, creamy potato puree, truffle and Perigueux sauce, and to satiate sweeter taste buds, Mini coconuts filled with pina colada on a passion fruit cream.The resort’s executive chef, and his team, have worked hard to create seasonal menus to celebrate the spirit of the season in gastronomic style across its 12 additional restaurants.
