Chef Tran Thanh Chung, Chef de Cuisine

Born in Hanoi, Vietnam, Chef Tran Thanh Chung has been living in the Middle East for over ten years. He started his career in his home town at Ha-Noi Garden Restaurant and then gained experience at Hilton hotel in Hanoi. In 2003 he moved to the United Arab Emirates where he accepted the challenge as demi-chef de partie to open Pepper Crab, an Asian restaurant in Dubai. In 2007 he took the lead of Hoi An restaurant at the Shangri-La hotel, that serves Vietnamese and French fusion cuisine and was named in 2012 Best South Asian restaurant by What’s On Dubai magazine. He also received Highly Commended award by Time Out Dubai magazine four consecutive years from 2010 to 2013. In 2014, Chef Chung joined One&Only Royal Mirage as chef de cuisine at Eauzone which was awarded with Best Romantic and Highly Commended restaurant in 2014 by Time Out Dubai.

Recently appointed as chef de cuisine in Li Jiang, he is bringing new flavours from the South of Asia to his new menu.
