At The Ritz-Carlton, Sanya, embark on an exceptional culinary journey, enjoying authentic Italian cuisine amid the chic contemporary surroundings of Sofia. Headed by recently appointed chef de cuisine Filippo Fondatori, Sofia invites discerning guests to discover the true art of Fondatori’s native cuisine, melding the finest ingredients with time-honoured cooking techniques to create a distinctive taste sensation.

“Italian food has its own tradition of great produce, elegant display, and honest, original flavour – all factors that differentiate it from other cuisines,” said Fondatori. “And I hope to bring guests this delightful dining experience, with its surprising and subtle flavours.”

Born in Italy, Fondatori fell in love with cooking at a young age. At 6 years old, he was helping his grandmother prepare Sunday family lunches. He spent about 13 years deepening his knowledge of and skill in Italian cuisine in and out Europe. In March 2013, Fondatori joined The Ritz-Carlton, Sanya to lead Sofia’s culinary team, presenting simple yet classical Italian dishes as well as a unique lifestyle concept for all food lovers.

“I live my life by the philosophy of food, where I am inspired to use only the finest ingredients and traditional cooking techniques to provide guests with original tastes. At the same time, we take diners’ feedback to heart, adapting and honing the details to meet their needs.”

Chef Fondatori has launched a brand new a la carte menu that includes authentic classic dishes among delicacies prepared with an innovative twist. Additionally, Sofia offers monthly promotions that vary according to seasonal ingredients and the chef’s current inspiration. Signature dishes include Il Merluzzo (cod fish, almond crust, cauliflower foam, enoki mushroom) and Maialino da latte Iberico (72 hours slow cook pork belly, pumpkin puree, spinach,candied walnuts), both masterpieces of a modern style of cooking and presentation, as well as Tortelli “Mugellani” di patate (fresh egg pasta ravioli, potato, beef and pork ragout), a special dish from Fondatori’s hometown of Tuscany.
