M bistro’s Chef de Cuisine Emily Dillport says, “Cooking is my true first love.” In her late teens, Dillport used to drive from Orlando to New Orleans to eat at her favorite restaurants after working an all-night shift. She then worked at The Ritz-Carlton, St. Thomas where she learned to prepare fresh fish and produce. The M bistro menu is inspired by her dining adventures in New Orleans and her time on the islands. Signature menu items include Bananas Foster French Toast, Cajun Benedict, Red Beans and Rice Hummus, Tuna Tartar, Jambalaya Fritters, BLT, Chicken and Waffles and Surf-n-Turf. Menu items change regularly. Reservations are recommended and jackets are not required.

Special reservations are available at the chef’s table in the kitchen, one of three velvet-draped cheaters’ booths and the semi-private wine room.
