Leading Bar Cocoa and Urban Sip’s expert team of chefs and pastry artists, as well as banquets, catering and in-room dining culinary for The Ritz-Carlton, Charlotte, is Executive Sous Chef Nathan Volz. Chef Volz has brought his culinary artistry to acclaimed restaurants including 10 Arts by Eric Ripert at The Ritz-Carlton, Philadelphia and 2 West at The Ritz-Carlton, Battery Park. He joined The Ritz-Carlton Hotel Company at a young age following culinary training with Le Cordon Bleu, but unlike many famous chefs, he did not grow up with just the kitchen in his sights. Volz grew up cooking alongside his mother and working in restaurants as a teenager, but he initially chose to major in accounting at college. Ultimately, he gave up a future at a desk, though, returning his true lifelong passion of creating great food. Nathan Volz brings a strong and admired Ritz-Carlton pedigree to his position, having also worked at The Ritz-Carlton, Laguna Niguel in California and The Ritz-Carlton Lodge, Reynolds Plantation in Georgia.

Heidi Kabath, Pastry Chef

Award-winning culinarian Heidi Kabath has been named Pastry Chef for The Ritz-Carlton, Charlotte and Bar Cocoa dessert boutique, both located in the heart of the city’s uptown district. For Chef Kabath, the appointment is the culmination of a career in which she has provided widely recognized pastry excellence for The Ritz-Carlton Hotel Company.

Known for her creative chocolate showpieces, ice creams, sorbets and hand-crafted truffles, Heidi Kabath has specialized advanced education from the Notter School of Pastry Arts, as well as training in contemporary specialty areas including gluten-free and dairy-free desserts. A pastry competition winner, she is also the recipient of many Ritz-Carlton leader and employee quality awards.
