Chef de Cuisine, Ta Van Huong

Chef Ta Van, who was born and raised in Ha Nam in the northern part of Vietnam, has created a menu that offers guests a one-of-a-kind Asian dining experience through a diverse selection highlighting the cuisine from his homeland as well as the gastronomic culture of various Asian countries. He has also tapped into a rich trove of family recipes, including a mouthwatering Ginger Sea Bass wrapped in Lotus Leaf, a dish created by his grandmother. Other signature highlights include rice paper rolls from Vietnam, tom yum soup from Thailand, black pepper crab from Singapore and miso black cod from Japan.




Ingredients: (Serves 1 person)

Qty. Ingredients
200 g banana (1 banana)
80 g passion fruit
40 g sugar
40 g butter
100 g vanilla ice cream (1 scoop)


  • Cut the banana in half and roast it in the oven for 5 minutes
  • Make a regular caramel with the sugar, once it is done add the butter
  • Take half of the sugar caramel and mix with the passion fruit.
  • Remove the banana from the oven and cook it for 3 minutes more on the remaining caramel.
  • Serve the banana with the passion fruit caramel sauce and the vanilla ice cream.
