Blue Jade Chef, Ta Van welcomes you to his Asian kitchen and lets you discover the art of crafting beautifully wrapped dim sum. Learn how to make 5 different types of dim sum featuring four savory dishes and a specially created dessert dim sum, in a single setting. Package includes signature welcome tea of Blue Jade, interactive culinary demonstration followed by dim sum tasting served with signature infused Asian mocktail and specially crafted master class souvenirs.

Chef de Cuisine, Ta Van Huong

Chef Ta Van, who was born and raised in Ha Nam in the northern part of Vietnam, has created a menu that offers guests a one-of-a-kind Asian dining experience through a diverse selection highlighting the cuisine from his homeland as well as the gastronomic culture of various Asian countries. He has also tapped into a rich trove of family recipes, including a mouthwatering Ginger Sea Bass wrapped in Lotus Leaf, a dish created by his grandmother. Other signature highlights include rice paper rolls from Vietnam, tom yum soup from Thailand, black pepper crab from Singapore and miso black cod from Japan.



Ingredients: (Serves 1 person)

Qty. Ingredients
30 g Tempura flour
30 ml Cold Water
100 g Shrimps, Cleaned and without shells
30 g Sushi Rice, Cooked with 10ml of Sushi Vinegar
50 g Cucumber
½ sheet Toasted Nori
10 g Shiso leaves, Clean and Chopped very fine and long strips
5 g Tobiko
80 g Sliced Avocado
20 g Pickled Ginger
10 g Spring Onion
5 g Sesame Seeds
5 g Wasabi
20 ml Soya Sauce


• In a bowl, blend the flour and water. Preheat the oil in the deep fryer or fry pan to 180 °C (350 °F).
• Shell the shrimp, leaving the tails. Cover with plastic wrap. Crush them with your fingers until well flattened.
• Dip the shrimp in the tempura batter and fry in the hot oil for about 1 minute or until golden brown. Drain on paper towels.

• Cut the cucumber horizontally to get a long thin slice, no more than 0.5-cm (1/4-inch) thick.
• Spread the rice on the nori sheet, shiny side down, about 1.25-cm (1/2-inch) from the edge, working with moistened fingers. Cover the rice with the sesame seeds, spring onion and Shiso leaves.
• Place the cucumber slices in the middle of rice. Layer with the shrimps. Finish with the avocado.
• Place on the bamboo mat and roll. Squeeze the roll with the bamboo mat by applying uniform pressure.
• Crust it with the Tobiko.
• Dip the tip of a knife in water and cut the roll into 5 bites and serve with soya sauce, pickled ginger and wasabi.
