At Candil, hand-blown glass artfully enveloped in wire is much like the agave plant; a tough exterior protecting the delicate treasure within. The ancient plan is the source of the well known tequila & mezcal and the less common sotol, bacanora, raicilla among others. Those, along with other Mexican spirits and local ingredients, are used to create bespoke cocktails including the Pastorcito, mixologist Hector Ramirez’s favorite and named after the famous Taco al Pastor.
“Agave is like wine; it can vary from year to year, region to region, mezcalero to mezcalero. I think that’s partly why agave spirits are so loved and respected.”
Lunch: 12 p.m to 5 p.m
