At Candil, hand-blown glass artfully enveloped in wire is much like the agave plant; a tough exterior protecting the delicate treasure within. The ancient plant is the source of mezcal and tequila, of which the bar features more than 100 labels. Those, along with other Mexican spirits and local ingredients, are used to create bespoke cocktails including the Nauyaca, mixologist Hector Ramirez’s favorite and named for a viper found in his home state of Guerrero.
“Agave is like wine; it can vary from year to year, region to region, mezcalero to mezcalero. I think that’s partly why agave spirits are so loved and respected.”
