For this event, the Courtyard is surrounded with white chiffon that has been up-lit in soft shades of orange, lemon and lime while a sweet smell of citrus fills the air. Buffet tables are scattered around the lawn area, each dressed with citrus colored fabric and decorated with a series of clear glass vases that are filled with fresh citrus and floating candles. Guest tables come in different sizes, both standing and seated, and draped to the floor with a citrus colored cloth. The center of each seating table will hold a sculpture of fresh citrus fruit, both whole and cut, to expose the luscious fruit and release it’s fragrance into the air. The tall tables will support a citrus colored candle that has been encased in a clear glass hurricane vase and surrounded with fresh cut citrus fruit. Overhead, glowing white paper lanterns criss-cross the lawn area creating an intimate setting under the stars.
Cobalt Radiance
Step through the entrance flanked by two crystal vases filled with blue water and fresh florals atop large black pedestals. Potted ferns and palms placed around the room are accented by special uplighting that adds an almost ethereal quality to the arrangements.
Puttin' on The Ritz
End the conference with a grand finale. This is a gala dinner dance meticulously planned and orchestrated. The dining experience showcases the best of creativity and ambience, reflecting finesse seldom achieved elsewhere, yet fully appreciated by those who demand an extra measure of quality and service.
Moulin Rouge
Your guests will feel as though they are strolling along the streets of 1900’s Paris, France as they approach the Moulin Rouge event. Guests can choose a costume and prepare for the opening of the club. Inside the club, moving lights, feather chandeliers, extravagant fabrics, can-can dancers and the music of Moulin Rouge gives your guests a taste of what it must have been like back in the romantic days of Paris at the turn of the century.
Margaritaville
Salt air and sea breezes from the tranquil Atlantic combine with the aromas of fresh seafood and frozen margaritas along with the vibrant sounds of Jimmy Buffett set the stage for a night in Margaritaville. Tables are covered with vibrant linens and coordinating napkins. This party is complete with coconut bowling and shuffle board. Games, fun, Jimmy Buffett tunes and a little surf and turf - there's something for everyone!
Havana Nights
Enter an art deco Cuban nightclub complete with a personalized marquis, and doormen in white suits and fedoras. Inside the lavish cabaret style club, a DJ will provide the hottest tunes while cigar girls offer the finest hand rolled cigars. Guests will enjoy Cuban delicacies on tables draped with floor length leopard print linens topped with a smoky brown vase encompassed by a wrought iron stand accenting yellow oncidium orchids and green lily grass. Palm trees and lush island greenery enliven the true spirit of a night in Havana.
Music Under the Stars
Arrive on the Oceanfront Lawn for this stylish affair. Guests pass through a beautiful archway enhanced with fresh florals and greenery to encounter an ornately carved white fountain. The orchestra performs from under a beautiful white tent. To complete the evening, a grand finale of fireworks coupled with patriotic musical pieces will add the finishing touch.
The Great Gatsby
Enter the 1920s. The approach to the room sets the mood, featuring white lattice panels, accented with florals and Tiffany lights. As you enter the room, sleek vintage automobiles placed within the area are a sight to remember. To complete this magnificent affair, the stage is accented with coordinating floral arrangements displayed in tall crystal vases.
Black Tie Affair
Ivory and ebony, what perfect harmony, and this event is nothing short of that. The focal point is the large rotating stage dressed with white skirting and white carpet at the center of the room. Resting on top are two black baby grand pianos where the stars of the evening will perform a fabulous dueling pianos act. Black and white dance floors will be placed on opposite ends of the stage setting. Hanging over the stage is a cluster of elegant crystal chandeliers casting a warm and elegant glow onto the stage area.
The elegant guest tables are covered with black pin tuck linens and topped with a pair of elegant black metal candelabras that rest on a sheet of musical notepaper. Frosted crackle votive candles surround the candelabras. Each place setting is marked with a pure white napkin. The perimeter of the room is dressed with majestic palms in decorative black pots.
Phantom of the Opera
Let silent staff members dressed in floor length black capes and white phantom masks escort you in. On cue, fog billows across the floor as the guests are invited to enter the Phantom's lair through our cobwebbed underground entryway. Tables are set in black with complimenting Baroque silver candelabrums, black tapered candles and deep red roses adding to the somber and mysterious tone of this spine-tingling event.
A Wicket Affair
Don your favorite croquet apparel and prepare to play the game. Table decor and fresh florals enhance the area. For your croquet pleasure, staff will be available to demonstrate and facilitate play with all of the necessary equipment.
Rockin-N-Rollin’ 50's Party
Rock-n-roll the night away at The Ritz-Carlton! What a wonderful way to let your hair down. Step back in time to the days of poodle skirts, drive-ins, and The Hop. Lighted silhouettes of couples dancing the jitterbug, 18-inch records suspended from the ceiling, and a giant balloon arch create a nostalgic mood. Rockin-n-rollin’ has never been so much fun.
Florida Clam Bake
Spend an evening sampling the culinary specialty of Florida's Golden Isle. Just down the beach from the Victorian seaport town of Fernandina, we have developed the perfect location for a seaside feast. A roaring fire and twelve-foot working lighthouse is set next to the wharf-side buffets. Oversized shells, ships' wheels, lobster traps, shrimp nets and lanterns adorn the Saloon and Bait & Tackle store facades.
Surf's Up Beach Bash
Cruise on in as the sun sinks into the waves of the Atlantic Ocean. A mini lifeguard chair stands in one corner draped with colorful beach towels and inflatables. Tropical palm trees, tiki huts, and fresh tropical florals add to the overall look. The tables are set with tropical overlays and fresh floral centerpieces. The sounds of Jimmy Buffet and the Beach Boys-style music set the mood for an awesome Surf's Up evening.
Hero's Sports Bar
Bring out the sportsman in everyone. That's right sports fans, this is the largest, most spectacular sports bar this side of the line of scrimmage. The area is decorated with an array of athletic displays and sports paraphernalia. Your group may select from a number of fantastic and competitive games.
Party Like a Pirate
Enter the realm of a pirate's fortress and beware of alligators and surly, peg-legged buccaneers. Costumed wait staff will greet your guests with pirate's punch and grog while providing a warm welcome into the eddy of Captain Louis Aury. Tables decorated in burlap linen, black and red alternating napkins, and crows nest and pirate flag centerpieces create the perfect setting to feast on fresh Florida bounty.
Eight Flags
Take a trip into the past and rediscover the eight flags of Amelia Island. Upon entry, guests are greeted by the French, Spanish, English, Patriots, Green Cross of Florida, Mexican, United States and Confederate flags. Food stations located around the room represent the nations whose flags have flown over the island. Each station depicts some aspect of the flag and its people, and displays descriptions of battles, important people and customs of the time period.
Sports Bar
Welcome to a high energy kick off party! Referees in black and white striped shirts greet you as you enter the sports bar. Pennants, sports memorabilia and plenty of beer will enhance the evening. Buckets of the cold stuff will be alternated with sports centerpieces and fresh flowers. Tall bar tables, cocktail and dinner round tables dressed in sports-themed linens create the perfect spot to enjoy the feast of junk food, concession stand favorites and tailgating specialties.
Fort Clinch Dinner

Tiger Point Marina
Spend the evening sampling the specialties of Florida's Golden Isle in this nautical setting. Tiger Point Marina sits near a bluff that has been fought over, conquered, and occupied by the English, Spanish, pirates, Mexicans, French and others. This picturesque location overlooking the Amelia River is the perfect spot for an outside party.
