Food lovers can look forward to trying out Chef Koichi Hashimoto’s limited course menu – serving at our private dining room “Saletta Privata” at La Locanda for three days. Chef Hashimoto trained at El Bulli in Spain and Noma in Denmark - two famous restaurants that have both held first place on the list of “The World’s 50 Best Restaurants.” We offer guests of The Ritz-Carlton, Kyoto menus of modern and creative dishes cooked in the open kitchen with the techniques of modern gastronomy. Originally from Osaka, Chef Hashimoto is the owner chef of the Celaravird restaurant in Tokyo. In addition to his training at El Bulli, he worked at Martin Berasategui in Spain and others. When he returned to Japan, he worked as head chef of san pau tokyo, and Tapas Molecular Bar at the Mandarin Oriental Tokyo. His speciality is modern creative cooking using cutting-edge techniques.
