Meet the Chef

Chef De Cuisine, Harunobu Furuta

A native of Japan, Chef Harunobu Furuta brings over 15 years of experience to his role as Sushi Chef for DUSK located in The Ritz-Carlton, Naples. Specializing in the Edomae sushi style, Futura artfully blends his Japanese training and heritage with American culinary concepts and flavors to create unique signature selections.

Furuta is licensed in Fugu or puffer fish preparation, a toxic delicacy which only licensed chefs are allowed to prepare in Japan. To achieve this certification and perfect his skill, Furuta trained to safely prepare Fugu for three years before taking the examination, an exam that approximately 70 percent of applicants fail.

Prior to joining the Naples resort in 2013, Chef Furuta was Chef de Partie at The Ritz-Carlton, Okinawa, where he was responsible for the resort’s Japanese kitchen. While there, he was awarded the hotel’s prestigious “Five-Star Employee Award,” which recognizes overall commitment to excellence.

His additional experiences in the sushi arts include restaurants throughout Japan such as MUKU located in Kafu Resort Fuchkau; TOUKA Horie; Ganko sushi; and Maguroya.

Chef Furuta holds degrees from both Tuji-gakuen Nihon Culinary Institute and Hannan University.
