Pear and Gorgonzola Salad with Champagne vinaigrette (Serves ???6)Ingredients2 Medium Pears, peeled, cored and quarteredPear Mixture:½ Cup Apricot Nectar¼ Cup Champagne Vinegar3 Tablespoons SugarPinch of SaltSalad:2 ounces Arugula2 ounces Baby Spinach½ ounce Ground Roasted Pecans2 ounces Gorgonzola CheeseFresh pea tendrilsSalt & PepperVinaigrette:¾ Cup Champagne Vinegar½ Cup Shallots, sliced2 Teaspoons Chopped Garlic1/8 Cup Whole Grain Mustard1 Tablespoon Dijon Mustard1/8 Cup ChervilDash Cayenne Pepper1/8 Cup Sugar1 ½ Cups Extra Virgin Olive Oil¼ Teaspoon Worcestershire Sauce2 Cups Salad OilSalt & Pepper, to tastePreparation1. Slowly roast pears in a 250*F in an uncovered baking dish, basting every 15 minutes in the apricot nectar mixture2. Chill the pears in their liquid3. Toss the salad ingredients together with 1 ½ ounces Champagne vinegar4. Garnish salad with fresh pea tendrils and the roasted pears5. Combine all ingredients except for the salad oil together in blender6. Slowly drizzle in salad oil to emulsify7. Adjust seasonings with salt & pepper
